Thin Slice of Dehydrated OrangeAlibi Gin is an American distilled gin created by two East Coast bartenders with the intention of developing a spirit tailored to cocktail use. It is distilled seven times in a custom copper pot still, a process described as focusing on clarity and refinement of the botanical profile.
The recipe is built around a core of juniper berries, supported by a blend of natural botanicals. Spearmint plays a defining role in the aromatic signature, delivering a fresh and cooling herbal character. Cinnamon introduces warmth and structure, while Guatemalan cardamom adds an exotic spice note with subtle citrus and resinous undertones. Together, these elements create a profile that balances freshness with spice.
On the nose, the first impression is floral and herbaceous, with juniper and mint clearly present. The palate is dry and structured, with a crisp mint-driven freshness at the forefront, followed by warming cinnamon and layered spice from the cardamom. The texture remains clean and controlled at 45 percent ABV, corresponding to 90 proof, with a finish that is persistent yet balanced.
Designed with bartenders in mind, Alibi Gin performs effectively in classic cocktails such as the Gin and Tonic, where mint and spice remain distinct, and in stirred drinks where its structured dryness and herbal-spice combination can be clearly expressed.

Thin Slice of Dehydrated OrangeIn a chilled highball glass, add a large, clear ice cube to maintain the integrity of Alibi Gin's 45% ABV.
Pour 5 cl of Alibi Gin over the ice, allowing its dry, spicy, floral, and herbal notes to unfold.
Top with 15 cl of East Imperial Burma Tonic, whose robust quinine and subtle citrus notes complement the gin's Guatemalan cardamom and cinnamon botanicals.
Gently stir to integrate.
Garnish with a thin slice of dehydrated orange, enhancing the gin's citrus undertones and providing a visual contrast.
