From the bar to the bottle

Before becoming a brand, 2934 is a story of service and transmission.

Thierry Bourgin, founder of BAG Spirit, comes from the world of hospitality. At La Cascade, where he introduced a gin tonic menu, he noticed something: gin has the power to reconcile people with the spirit.

Through food and gin pairings, discussions with the chef, and a selection that would grow to nearly thirty references over three years, gin gradually became a field of expression for him. A true sensory laboratory.

Then came the decisive encounters.

Emmanuel, a herbalist and Doctor of Pharmacy, helped him understand the botanical world with precision. Camille Héroult, distiller in Quimperlé, provided the production tools and guided the technical realization of the project.

Claire, a market gardener committed to sustainable farming in the Hérault region, revived an overlooked ingredient: the tomato leaf.

With all these elements brought together, I was finally able to put my ideas into a bottle and create a unique gin. — Thierry Bourgin

2934 was therefore born from a human network far more than from a simple marketing concept.

29 + 34: a deliberate geography

The name 2934 came almost naturally.

29 for FinistĂšre, where the gin is distilled. 34 for HĂ©rault, Thierry’s personal home ground.

Yet behind this apparent simplicity lies another interpretation.

Add the two departments together: 29 + 34 = 63 / 6 + 3 = 9.

A classic base with a bold vegetal twist

Distilled according to the London Dry method at the Héroult distillery, 2934 is built on a classic base: juniper, coriander, and cardamom.

The Breton side adds depth and texture with roasted buckwheat and angelica root. The Hérault influence brings brightness: orange zest, mint, a hint of almond
 and above all tomato leaves from nearly thirty heirloom varieties.

This is where 2934 truly asserts its singular identity.

Long considered little more than agricultural waste, the tomato leaf reveals a rare vegetal freshness. On the nose it evokes the crushed stem of a tomato plant warmed by the sun: green, slightly bitter, almost alive.

The result is a dry gin at 40% ABV, built around a balance of toasted grain, bright citrus, and herbal tension. A gin that surprises without overwhelming.

In a gin and tonic with a dry or neutral tonic, it preserves its vegetal reading; in a martini, its cereal backbone expresses itself with even greater clarity.

Thierry Bourgin also recommends a more unexpected way to enjoy it: the gin can be sipped neat over ice, accompanied by a square of dark chocolate.

During its first year, the gin was offered in a gourmet box with artisanal chocolate from Barre Clandestine. The pairing reveals an even more indulgent dimension of the spirit: the bitterness of cocoa naturally echoes the gin’s dry structure, while the roasted character of the chocolate resonates with the toasted buckwheat notes. Meanwhile, the vegetal freshness of the tomato leaf introduces a subtle contrast that lightens the whole experience and extends the finish.

More than a taste, a memory

Beyond technique, 2934 claims a deeply emotional dimension.

With around 1,400 bottles produced each year, 2934 remains a consciously artisanal creation — a search for balance rather than demonstration.

A gin that does not try to please at all costs, but rather to tell a story. A spirit born from a personal journey, a human network, and a conviction: taste can be a powerful vector of connection.
