Mermaid Pink Gin

Mermaid Pink Gin is a flavoured gin produced by the Isle of Wight Distillery, developed as a fruit-infused expression built on the distillery’s original Mermaid Gin. It reflects the same coastal and botanical identity as the core gin, while introducing a natural fruit dimension through the use of English strawberries. The intention behind the release was to create a pink gin that remains dry and balanced, avoiding the overt sweetness often associated with the category.

The base spirit is distilled using a traditional London Dry approach, with a botanical structure centered on juniper and supported by coriander seeds, angelica root and orris root. Lemon peel contributes brightness, while grains of paradise add a gentle, aromatic spice. Rock samphire, a coastal plant associated with the Isle of Wight shoreline, introduces a subtle saline and herbal nuance that connects the gin to its maritime origin. After distillation, the gin is infused with English strawberries, which provide natural color and fruit character without the addition of artificial flavoring or sugar.

On the nose, Mermaid Pink Gin presents fresh strawberry aromas layered over juniper and light citrus. Floral notes, including elderflower, appear softly in the background, accompanied by a gentle herbal freshness. The palate is clean and lightly textured, with juniper and citrus providing structure before ripe strawberry notes develop. The fruit remains integrated rather than dominant, allowing spice and herbal elements to maintain balance. The finish is dry and refreshing, with lingering fruit, citrus peel and a faint coastal salinity.

Mermaid Pink Gin is well suited to lighter serves that highlight its fruit and botanical balance. In a Gin and Tonic, a neutral tonic and minimal garnish allow the strawberry and citrus notes to remain clear. It can also be enjoyed over ice or used in simple cocktails where a restrained fruit-forward gin is appropriate, offering an alternative to sweeter pink gin styles.
