
Gins to love!

The London No. 1 Sherry Cask Gin is a barrel-aged expression developed in collaboration with González Byass, the historic sherry house based in Jerez de la Frontera. Distilled in the United Kingdom, it builds on the classic London No. 1 gin recipe before undergoing maturation in sherry-seasoned oak casks sourced from the González Byass cellars.
The base gin is produced using a traditional London Dry distillation, relying on a core of juniper berries supported by coriander seeds, angelica root, liquorice root, cassia bark, and a selection of citrus peels including orange, lemon, and bergamot. After distillation, the gin is rested in sherry casks, allowing a controlled interaction between the spirit and the oak previously used for aging sherry wines.
On the nose, the profile combines fresh juniper and citrus zest with warm spicy notes and subtle oxidative accents derived from the cask. The palate shows a rounded structure, where bright citrus and classic gin botanicals are complemented by gentle woody tones, balsamic nuances, and hints reminiscent of dried fruit and spice. The finish is dry, persistent, and softly oaked, with a restrained sweetness linked to the sherry cask influence.
This gin is well suited to contemplative serves such as a dry gin and tonic with minimal garnish, or as a base for classic cocktails where barrel-aged spirits are traditionally used, allowing the sherry cask character to remain clearly perceptible.
