Adamus Organic Dry Gin is produced in Portugal and is closely associated with the Bairrada region, an area historically known for viticulture. The project was conceived with the intention of creating a gin that expresses local agricultural identity rather than replicating established British models. A defining element of this approach is the use of the Baga grape, a native Portuguese variety traditionally used in regional wines, which brings a subtle vinous dimension to the spirit.
The gin is distilled using individually processed botanicals, a method chosen to preserve the integrity and aromatic precision of each ingredient. Copper pot stills are employed throughout the process, allowing careful control over extraction and balance. The base alcohol is agricultural in origin and certified organic, in line with the producer’s emphasis on traceability and natural raw materials.
On the nose, the profile opens with a clear expression of juniper, supported by fresh citrus tones from lemon and bitter orange peel. Floral nuances, notably lavender and hibiscus, appear progressively, adding lift and softness. On the palate, the structure is dry and precise. Juniper remains central, while cardamom and ginger contribute gentle warmth and spice. Sage introduces an herbal backbone, and cinnamon adds restrained depth without sweetness.
The texture is clean and polished, with a medium body that avoids heaviness. The finish is dry, persistent, and marked by lingering citrus zest and light floral echoes. Adamus Organic Dry Gin is well suited to a classic Gin and Tonic with a restrained garnish, as well as to dry, spirit-forward cocktails where clarity and aromatic definition are essential.
