The Herbalist Gin is a Belgian organic dry gin built around an unusually broad botanical concept. It was created through a collaboration between master distillers, mixologists and the research and development team of KeyPharm, a Belgian company specialized in medicinal plants and herbs. The gin is produced in partnership with Filliers, one of Belgium's historic distilling names, and its identity is directly linked to herbal knowledge, botanical selection and organic production rather than to a classic minimalist gin recipe.
The defining feature of The Herbalist Gin is its use of fifty carefully selected plants and herbs. These botanicals are not treated as a single undifferentiated mass. They are grouped according to aromatic families, macerated separately, and then distilled in a traditional copper pot still. This production method gives the gin a more controlled structure: floral, leafy, spicy, citrus and berry elements can be extracted and balanced before final blending. The result is a complex gin, but not one designed merely to impress through the number of ingredients. Its construction is based on aromatic layering and the search for equilibrium.
The botanical profile includes juniper berries, several floral ingredients such as lavender, rose, chamomile and elderflower, herbal and spicy elements such as rosemary, thyme, coriander, cardamom, ginger, black pepper, cumin, cinnamon, clove, fennel, marjoram, lemon balm and lemongrass, as well as rooty or earthy components such as angelica, orris root, gentian, dandelion, milk thistle and turmeric. Leaf and resinous notes are also part of the profile, with green tea, eucalyptus, pine, myrtle and linden. Citrus is represented by lime zest and mandarin zest, while the fruit and berry side includes blueberry, raspberry, blackberry, strawberry, redcurrant, acai, acerola, aronia, pomegranate, blackcurrant, camu camu and cranberry.
On the nose, The Herbalist Gin opens with citrus zest, quickly supported by floral and leafy notes. The aroma is delicate but layered, moving from mandarin and lime toward lavender, rose, green tea and herbs. On the palate, the first impression remains fresh and citrus-led, before the herbal and spicy structure becomes more prominent. Juniper provides the dry gin backbone, while coriander, cardamom, rosemary and ginger bring lift and warmth. The finish is medium in length, with a transition toward earthier notes, gentle spice and a warm botanical glow.
The Herbalist Gin works well in a gin and tonic when paired with a tonic that does not add excessive sweetness. A dry or lightly aromatic tonic allows the citrus, herbs and earthy finish to remain clear. Mandarin zest, lime zest or a few juniper berries are coherent garnishes. It can also be used in refined herbal cocktails, especially where citrus, green tea or delicate floral notes are part of the drink.
