Gin de Chimay Lou is a Belgian flavoured gin developed within the Gin de Chimay range, closely linked to Cave de Chimay and the region surrounding the city of Chimay. The project is presented as the work of Francis, launched after the closure of his restaurant and shaped by roughly thirty years of culinary experience. That gastronomic background gives the range a distinctive identity, rooted in aromatic balance and flavour construction rather than a purely technical interpretation of gin.
Lou is built around officinal plants and a profile centred on elderflower and raspberry. These two elements define much of its personality. Elderflower brings a delicate floral dimension, soft and expressive, while raspberry introduces a brighter fruit character that gives the gin an immediately approachable style. Together, they create a profile that moves away from the sharper, drier interpretation of traditional gin while preserving a recognisable botanical backbone.
On the nose, the floral character arrives first, carried by the softness of elderflower and accompanied by subtle fruity nuances reminiscent of ripe raspberry. The aromatic profile feels supple and accessible, with herbal undertones reinforcing the botanical identity of the spirit. In the mouth, the texture leans toward roundness and freshness, where floral notes meet red fruit in a balanced and easy-drinking structure. The herbal dimension remains present in support, bringing continuity and preventing the profile from becoming overly sweet or confectionary.
Bottled at 37.5% alcohol by volume, Gin de Chimay Lou belongs naturally to the flavoured gin category and lends itself particularly well to refreshing serves. In a gin and tonic, a neutral tonic or an elderflower tonic allows its floral profile to remain expressive, while fresh raspberries or a subtle floral garnish can extend its aromatic identity without overwhelming the spirit itself.
