Gins to love!

LièGin Mer du Nord BIO is a Belgian organic gin that takes inspiration from the North Sea and coastal botanicals. It is presented as a herb-driven, citrus-accented gin built on a classic juniper structure, enriched with aromatic herbs and a marine element through the use of fucus seaweed.
The botanical selection combines juniper with thyme and sage, creating a dry, aromatic backbone. Rosemary reinforces the Mediterranean-herbal register, while citrus adds freshness and lift. Fucus introduces a subtle coastal nuance that can read as saline, mineral, or iodine-like, depending on dilution and serve.
On the nose, the gin opens with juniper and bright citrus, followed by a clear herbal layer dominated by thyme and rosemary. In the background, a faint marine impression can appear as a mineral and slightly briny note.
On the palate, the profile is structured and dry. Juniper and herbs lead, supported by citrus brightness that keeps the mid-palate fresh. The seaweed element contributes depth rather than overt flavor, extending the finish with a light maritime impression. The texture is clean and moderately weighted.
The finish is dry and persistent, marked by herbs, citrus zest, and a discreet coastal echo. LièGin Mer du Nord BIO is particularly suited to a Gin and Tonic with a neutral tonic, where the herbal and maritime character remains readable, and can also be used in simple cocktails that benefit from a crisp, herbaceous profile.
