
Gins to love!

Me Cassez Pas Les Noix is a Navy Strength gin created by the French Booze Project, conceived as a deeply personal and unconventional expression. Its name and alcohol strength are directly inspired by a freediving record of 57.1 meters achieved by the distiller in the Caribbean Sea, a symbolic depth that is mirrored in the gin’s bottling strength of 57.1 percent alcohol by volume.
The gin is distilled in a 200 liter bain marie still, a technique chosen to preserve the integrity and richness of the botanicals. The base is built on juniper, which provides structure and definition, and is complemented by an atypical maceration of pistachios and raw cocoa beans. Dandelion honey is used to round and bind the profile, adding depth without masking the core botanicals.
On the nose, the gin reveals intense aromas of pistachio, nuts and cocoa, supported by subtle floral and honeyed nuances. The palate is powerful and expressive, marked by bitter raw cocoa, roasted nut notes and a distinctive saline impression that evokes the marine inspiration behind the spirit. The texture is dense and structured, leading into a long, persistent finish where pistachio, cocoa and honey notes linger with warmth and intensity.
Despite its high strength, Me Cassez Pas Les Noix is designed to remain balanced and expressive. It can be enjoyed in small quantities neat by experienced drinkers, or diluted with ice or a minimal mixer to explore its full aromatic range. The gin has been recognized in international competitions, notably receiving a Gold Medal at the Frankfurt International Trophy 2022 and being awarded Best Gin at the Spirits Selection of the Concours Mondial de Bruxelles 2023.
