Gins to love!

Bimber Kumquat Gin is produced by Bimber Distillery in London and forms part of the distillery's range of small batch, handcrafted spirits. It is built around a set of eight botanicals with kumquat at the centre, designed to showcase a bright, citrus-led style while retaining a clear juniper structure. The gin is bottled at 47% ABV in 50 cl format, giving it enough intensity to carry its aromatic profile in both simple and more complex serves.
The recipe combines classic gin botanicals with a selection of citrus fruits. Juniper berries provide the essential backbone, while kumquat brings a distinctive, slightly sweet and gently bitter citrus character. The official specification highlights the presence of grapefruit, lemon and orange alongside iris, angelica and coriander, which together support the gin's citrus-forward profile with floral, herbal and earthy nuances.
On the nose, Bimber Kumquat Gin presents as a clear juniper and citrus-forward gin. Aromas of juniper are quickly joined by kumquat and other citrus notes such as grapefruit and lemon. There is a sense of freshness and lift, with a combination of sweet and tangy citrus tones that remain well defined rather than overly perfumed.
On the palate, the gin is crisp and structured. Juniper is immediately recognisable, followed by the juicy and slightly exotic character of kumquat, supported by layers of grapefruit, orange and lemon. Angelica and coriander add gentle herbal and earthy undertones that keep the profile balanced, while the elevated bottling strength contributes body and presence without making the spirit heavy.
The finish is clean and persistent, marked by lingering citrus zest, a light bitterness typical of kumquat and grapefruit, and a subtle warmth. The aftertaste remains dry, with the juniper and citrus combination leaving a refreshing impression.
Bimber Kumquat Gin is versatile in use. It can be enjoyed neat over ice, but is most commonly served in a classic gin and tonic where its citrus character can be highlighted with a simple garnish such as a slice of citrus fruit. It also works well with a splash of soda water or ginger ale and forms a distinctive base for cocktails such as a Martini or a Negroni, where its juniper and citrus-led profile stands up well alongside vermouth and bitters.
