Bigallet Gin Bio S is an organic French gin produced in the Alpine foothills by Maison Bigallet, a house known since the late 19th century for its syrups and regional spirits. It is made from certified organic plants harvested by hand in French mountain ranges, with a focus on wild picking carried out in a way that respects local biodiversity. The core botanicals include juniper berries, spruce buds picked in spring, bilberry leaves, vulnerary, Alpine tea and elderflower, to which iris root adds a floral and slightly powdery dimension. Each botanical bouquet is distilled separately or in small groups in traditional copper stills, and no sugar or other additives are introduced, in keeping with the classical dry gin style.
On the nose, Bigallet Gin Bio S shows a distinctly vegetal profile, evoking a damp forest floor with fresh undergrowth and mossy notes. Juniper is clearly present but integrated into a broader herbal frame, with hints of mountain plants, resin from spruce buds and a light floral top note from elderflower. On the palate, the attack is peppery and firmly herbal. Juniper and green notes from bilberry leaves and Alpine tea dominate the first impression, before the floral components gradually come forward. Elderflower and iris root contribute a soft, aromatic lift that lengthens the flavour without adding sweetness.
The texture is dry and precise, with a clean, linear progression from spicy and vegetal to floral and slightly bitter, reflecting the use of wild mountain botanicals and the absence of added sugar. The finish is long, aromatic and subtly earthy, marked by juniper, forest herbs and a fine, controlled bitterness. Bigallet Gin Bio S is well suited to classic dry serves. It can be enjoyed neat or over ice, but is most often used in a Gin and Tonic where its vegetal and floral character stands out with a neutral tonic and a simple garnish such as a lemon peel or a small sprig of mountain herb. It also lends itself to martini-style cocktails in which its dry, herbal structure can be highlighted.
