KI NO BI Kyoto Dry Gin Limited Edition is produced by The Kyoto Distillery using a rice spirit base and botanicals sourced in and around Kyoto. The recipe groups botanicals into six elements (Base, Citrus, Herbal, Spice, Green Tea, Fruity & Floral) that are distilled separately before blending with soft Fushimi water. Key components include juniper berries, yellow yuzu, akamatsu (Japanese red pine), shiso and bamboo leaves, ginger, lemon, orris root, gyokuro tea, green sansho and kinome. The result balances bright citrus, gentle spice, floral nuance and herbal depth.
