
Gins to love!

LièGin Val-Dieu is a Belgian flavored gin developed as a collaboration between LièGin and the Val-Dieu Abbey Brewery. This limited edition explores the meeting point between brewing and distillation by integrating a distillate derived from Val-Dieu Cuvée 800 beer into a gin framework built around juniper.
The recipe combines classic gin botanicals with elements inspired by the beer world. Juniper provides structure and identity, while yuzu and grapefruit bring a clear citrus expression. Ginger adds a gentle spicy lift. The beer distillate contributes malty and slightly woody nuances that set this expression apart from more traditional fruit-driven gins.
On the nose, citrus notes appear first, led by grapefruit and yuzu, followed by juniper. Subtle malty and cereal-like aromas emerge underneath, accompanied by a restrained spicy accent from ginger.
On the palate, the gin opens with fresh citrus before moving into a more rounded mid-palate where juniper and malted notes coexist. Ginger provides aromatic tension without heat, while the beer-derived component adds depth and a faint bitterness reminiscent of brewing ingredients. The texture is smooth, with a moderate weight.
The finish is dry and slightly bitter, marked by citrus zest, soft malt tones, and lingering spice. LièGin Val-Dieu is well suited to a Gin and Tonic with a neutral or lightly citrus-driven tonic, as well as simple cocktails where its hybrid character between gin and beer can remain clearly readable.
