Gins to love!

Gin de Binche is a Belgian distilled gin created as an homage to the city of Binche, known for its folklore and architectural heritage. A signature note of blood orange is deliberately included as a reference to the traditional offering made on Mardi Gras by the Gilles, emblematic figures of the Binche carnival.
The recipe combines classic gin markers such as juniper, citrus and clove with a broader aromatic palette that includes caraway, hyssop, hops, lavender, coriander, cumin, fennel and aniseed. This composition is designed to open with a floral impression, move into a distinctly herbal core supported by juniper, and finish on the fine, delicate freshness of blood orange.
In production, the distillery highlights a specific approach: each spice is distilled separately to support consistency, before the final character is developed during heating in a bain-marie using hammered copper vessels. This method aims to preserve clarity of each botanical while building a layered, integrated profile.
Gin de Binche has also been recognized in spirits competitions, including a Double Gold medal in New York (2020) and a Platinum distinction in San Francisco (2019). It has also received medals in Brussels (Gold in 2018 and 2019), alongside additional awards listed by the producer.
In service, the profile is typically suited to a straightforward gin and tonic with a neutral tonic that does not mask the blood orange and floral-herbal balance. It can also be used in classic cocktails where citrus and spice are welcome structural elements.
