Valéo

Valéo is an organic dry gin produced by the Distillery-Herboristery of the Abbey of Maredsous in Belgium. The distillery draws on a long-standing tradition of herbal knowledge linked to monastic practices, with a focus on plants historically used in infusions and herbal preparations.

This gin is built around a selection of wildflowers and herbs, including poppy, woodruff, St John’s wort, mallow, and primrose. These botanicals are chosen for their aromatic qualities rather than for intensity, resulting in a profile that favors subtlety and balance over power.

On the nose, Valéo opens with gentle floral notes and soft herbal nuances. The palate is smooth and rounded, with a light vegetal character and a restrained bitterness that supports the floral elements. The texture remains supple throughout, leading to a calm and clean finish with lingering herbal impressions.

Valéo is well suited to simple serves that preserve its delicate aromatic structure, such as a Gin and Tonic with a mild or floral tonic, or in light cocktails where herbal and floral notes are intended to remain in the foreground.
