Balancal Fennel Gin is a distinguished London Dry Gin that pays homage to the rich botanical heritage of Madeira. Crafted with meticulous attention to detail, this gin features a harmonious blend of juniper berries and locally sourced fennel seeds, complemented by coriander seeds, licorice, angelica root, and orris root. The production process begins with a 24-hour maceration of the primary botanicals in grain neutral alcohol at 50% ABV. Following this, the mixture is distilled without the use of rectification plates, a deliberate choice to preserve the sweet and aromatic essence of fennel. Post-distillation, the spirit is carefully diluted with pure mountain water to achieve an optimal alcohol content of 41.2% before bottling.
