Gins to love!

Tokiiro Niigata Gin is produced by Shinobu Distillery in Niigata, Japan, a region known for its pristine environment and a long-standing culture of careful craftsmanship in spirits. This gin belongs to the distilled gin category and reflects a contemporary Japanese interpretation of the style, combining classic gin structure with distinctly Japanese citrus and spice elements.
The philosophy behind Tokiiro Niigata Gin is centered on balance and clarity. Rather than relying on an extensive botanical list, the recipe focuses on a restrained selection that allows each ingredient to express itself clearly. Juniper forms the backbone, while yuzu, orange peel and Japanese pepper introduce a regional identity that differentiates the gin from more traditional Western profiles.
On the nose, the aroma opens with clean juniper and bright citrus. Yuzu brings a sharp yet elegant citrus freshness, supported by softer orange peel notes. Subtle herbal nuances from coriander and angelica root provide depth, while Japanese pepper adds a gentle spicy lift without overwhelming the aromatic profile.
The palate is full-bodied and structured, in line with its 47 percent alcohol volume. Juniper remains prominent, framed by vivid citrus flavors that feel precise rather than sweet. The Japanese pepper contributes a distinctive tingling spice and light herbal heat, complemented by earthy and rooty undertones from angelica. The texture is firm and dry, leading into a long and expressive finish.
The finish is persistent, combining lingering citrus oils, restrained spice and a dry herbal character. Tokiiro Niigata Gin can be enjoyed neat to fully appreciate its structure and intensity, or used in cocktails where its bold citrus and spicy profile can stand up to dilution. It also works particularly well in a classic gin and tonic with a neutral tonic that allows the yuzu and pepper notes to remain clearly defined.
