Akko Wild Gin of Galilee is produced by Jullius Craft Distillery and takes its name from the historic coastal city of Akko and the surrounding Galilee region. This area, located in the eastern Mediterranean, is characterized by a long agricultural history and a diverse native flora shaped by a warm climate and varied terrain. The gin is conceived as a regional expression rather than a traditional London-style interpretation.

A defining element of this gin is its base alcohol, which is distilled from grapes rather than neutral grain spirit. This choice reflects local agricultural practices and places the spirit closer to regional fruit distillation traditions. The botanical selection focuses on plants that grow naturally in the Galilee, including classic juniper alongside cade juniper, cedar of Lebanon, myrtle, olive, fig, citron, mandarin, and coriander. The distillery states that fresh botanicals are used and distilled individually, a method intended to preserve aromatic clarity and natural character.

On the nose, the profile is aromatic and expressive, combining resinous and herbal notes with bright citrus and ripe fruit.
