Malfy Gin Con Limone Description

Two Italian coasts supply the fruit. Malfy builds Con Limone on sun-ripened Italian lemons, drawing on Sicilian fruit and the prized Amalfi lemon, and sets them against Italian juniper at 41% ABV. Around that core sit coriander, cassia, liquorice, and orange and grapefruit peel, a supporting cast picked to widen the citrus rather than to compete with it. The lemon is the headline, but most of the work in this recipe goes into stopping that headline from becoming the only thing on the page.

Lemon is immediate and unmistakable, and it reads as zest and peel oil rather than as juice or syrup. The Amalfi character shows in the perfume of it, rounder and more floral than a sharp northern lemon, while grapefruit peel adds a drier bitterness across the top and orange peel fills in the warmer middle. Italian juniper holds a green resinous line underneath, firm enough to keep the bottle on the right side of the line separating a gin from a lemon cordial. Coriander threads a warm seed spice between fruit and juniper, cassia adds a thin band of bark warmth, and liquorice rounds the edges without sweetening. The palate is bright, oily and long, ending drier than the aroma suggests.
