Allspice is one berry, not a mixture. The name misleads almost everyone: it comes from a single Caribbean tree whose dried fruit happens to smell of clove, cinnamon and nutmeg at once, and calling it Jamaican pepper gets closer to the truth. In this recipe it supplies a peppery, clove-like dimension that reads as spice rather than as heat. The gin is French, at 40%, on fourteen natural plant extracts.
Citrus · Dry · Spicy · Herbal
Five distillations by bain-marie sit behind that. Heating a still indirectly rather than over flame is the gentler method, and doing it five times is a decision about texture: what comes out is notably smooth, and the aromatic detail survives in a way a harder run would not have allowed.
Juniper leads as it must, with thyme beside it as the herbal counterweight and a set of citrus peels above supplying brightness and lift. Anise and cinnamon then contribute the warm, sweet-spiced accents, and the allspice fills the space between them with its clove-and-pepper character.
On the nose, juniper comes first with anise and citrus close behind, herbal nuances filling in after.
The palate stays dry and clean, citrus and herbs shaping the middle, a spiced thread running through to the end. The finish is long and persistent, thyme, juniper and the allspice all still legible.
A neutral tonic keeps the herbal and citrus detail in focus. Stirred cocktails suit it for the dry botanical structure, which is what fourteen extracts and five gentle passes were aiming at. A recipe that large usually blurs, and if this one holds together it is because the spices were chosen to occupy different registers rather than to reinforce one another, so the palate reads as layers instead of as a single warm mass.
