Eden Mill Golf Gin is one of the rare bottles where the link to St Andrews is carried by named botanicals rather than by branding alone. Gorse, heather and lavender gathered from the Old Course are combined with Scottish kombu and juniper in a London Dry bottled at 42% ABV. The idea is precise: translate the famous golfing landscape into a dry, floral-herbal gin with a faint savoury edge from seaweed.

The nose should be read as a meeting of flowers, herbs and dry coastal vegetation. Gorse can suggest a warm yellow-flower note, heather brings a drier floral layer, and lavender adds aromatic lift without needing to dominate. Kombu gives the profile its unusual detail: a subtle saline, earthy depth that sits behind the flowers and keeps the gin from becoming purely perfumed. On the palate, juniper carries the structure, the floral notes open across the middle, and the finish becomes dry, lightly savoury and herbal. The 42% ABV keeps the bottle versatile rather than heavy.

A Mediterranean tonic is the right partner because it respects the floral side while leaving space for the kombu. Serve 4 cl of gin with 12 cl of tonic over clear ice, then garnish with a small lavender sprig and lemon peel. Lemon brings brightness to the herbal profile; lavender echoes the recipe but should be used with restraint. This is also a good Martini gin when the vermouth is dry and the garnish stays citrus-led.
