After maturation, the gin is gently sweetened using toasted brown sugar that has been previously aged in barrels. This controlled sweetening process gives the spirit its Old Tom character while preserving structure and aromatic precision. The influence of wood remains central, contributing roundness, subtle tannins and warm oxidative notes without masking the original botanical profile.
On the nose, the gin reveals candied citrus, soft spices and light floral accents.
