Fresh borage from the producer's own garden, wild fennel pollen and native mistletoe gathered from local blue gums give the recipe its sense of place. JuniperJuniperThe one compulsory botanical: gin must taste predominantly of juniper. Its "berry" is really a small conifer cone, resinous and peppery.Glossary leads, joined by mandarin, wormwood and black pepper. The gin shows hints of aniseed, black pepper and citrus: fennel pollen brings that soft anise note, mandarin the fruit and black pepper a dry warmth, while wormwood adds a slightly bitter herbal edge and borage a green, cucumber-like freshness that suits a long drink.
Katherine Nugent, Di Mayfield and Guy Parkinson are the owners behind the distillery. Home Gin is sold in a 700 ml bottle.
