Roasted pineapple spends three days steeping before it joins Adelaide Festival Gin 2026, and it gives this limited release its depth and a quiet sweetness. Prohibition Liquor Co. created the gin with Adelaide Festival to complete a trilogy of festival gins, a series celebrating arts and culture and the place they hold in Australia's creative landscape.
Citrus · Spicy · Fruity · Herbal
Distilled in Adelaide and bottled at 42% ABV, it leads with aromatic citrus and a savoury edge. Makrut lime leaf and grapefruit sit alongside juniper, bright and lightly bitter, while jasmine flower and shiso leaf add a floral lift and a green, herbal freshness. Kombu and black tea run underneath, giving a dry backbone and a gentle umami that keeps the pineapple in balance, so the fruit reads as depth more than sugar. Coriander seed, galangal and Sichuan pepper warm the finish, the pepper with a faint tingle, and liquorice root rounds it off.
Prohibition suggests a Holy Bramble. Shake 6 cl gin, 2.25 cl lime juice, 1.5 cl sugar syrup, a bar spoon of blackcurrant jam and three torn holy basil leaves with ice, then strain into a rocks glassRocks glassA short, heavy glass (tumbler) for a spirit over a large ice cube or a short cocktail.Glossary filled with crushed ice and garnish with a basil sprig. The blackcurrant answers the pineapple, and the basil meets the shiso and makrut lime. The 2026 edition comes in a 500 ml bottle.
