Juniper, pepper, star anise, liquorice and cardamom appear on the nose. The long finish brings ginger, coriander, lemon and pepper nuances, softening into a silky sensation. Star anise, cassia barkCassiaThe bark of a Chinese cinnamon tree, coarser and hotter than Ceylon cinnamon. It brings a warm, slightly sweet spice.Glossary and cardamom join the juniper in the recipe, alongside bitter almond, liquorice root and coriander seed. Grains of paradise, angelica root, hibiscus, lemon peel and cubeb are also named.

Grains of paradise and cubeb add their own peppery heat to the Sichuan pepper, while cassia brings a sweeter, warmer spice. Bitter almond and liquorice root round out the palate, hibiscus adds a light tartness, and angelica root keeps an earthy, dry base under the spice.

TOHI occupies a former spirit kitchen at Tohisoo manor, in Kohila, that later served as a leather factory. Priit Palk, Tormi Tamm and Siim Markus founded the distillery together. This London Dry won silver at the 2024 World Gin Awards and gold in the classic gin category at the 2025 Concours International de Lyon.
