The rhubarb juice in Junimperium Rhubarb Edition is cold-pressed. It is then blended with botanical distillates, and the finished Estonian gin is 40% ABV. Juniper, angelica root and coriander seed are joined by cassia bark, cardamom, vanilla, lemon peel and orange blossoms, the latter picked by hand.

The nose is fruity with a gentle honey-like note. The palate is fresh and aromatic, with a recognisable rhubarb note set against the botanical ingredients. The finish is slightly sweet and recalls honey, with a touch of cassia, whose warm, sweet spice extends the fruit.
Cardamom adds an aromatic lift to that spice, and vanilla softens the tartness of the rhubarb. Lemon peel and orange blossom bring citrus and floral touches, while angelica root and coriander seed keep a dry, herbal base beneath the fruit, so the sweetness never takes over.
Junimperium Distillery opened in early 2019 after more than a year of experiments. Visitors can discover it on a distillery tour in the Telliskivi quarter of Tallinn. Rhubarb Edition received a silver taste award at the 2021 World Gin Awards, and the producer's online shop offers it in both 700 ml and 200 ml bottles.
To make the signature gin and tonic, fill a large glass with ice and pour in 5 cl of gin. Add a thin orange slice, then 16 cl Fever-Tree Indian Tonic WaterIndian tonicThe classic tonic: sparkling water, bitter quinine and sugar. The orange brings a citrus accent to the fresh rhubarb and echoes the orange blossom of the recipe, while the tonic lengthens the drink and lets the gently spiced finish remain noticeable.
