Imagine standing on the coast and taking a big breath of fresh sea air: that is how Mt Fyffe Distillery introduces Shearwater Gin. The result is what the distillery calls a unique, oceanic gin. Seaweed brings a savoury, lightly saline note, closer to a sea breeze than to brine. Rosehip adds a soft, tart, fruity touch, and blue borage, a star-shaped flower with a fresh, cucumber-like taste, gives a cool floral lift. Mt Fyffe's Tiaki promise sums up its approach: the distiller picks many botanicals sustainably through the year, takes only what is needed and gives back to the community through donations.
