Organic green tea and red hibiscus give Cauldron Sunset Gin its floral, gently herbal character. This pink ginPink ginToday, a gin flavoured and tinted pink (red fruit, rhubarb…). Originally, plain gin with a few dashes of Angostura bitters.Glossary from the distillery's Signature Range is bottled at 40% ABV in Queensland, and its recipe adds citrus peel and Australian wild honey to juniper. Cauldron describes it as floral, herbal and citrus-led, with juniper keeping it recognisably a gin.
Citrus · Floral · Herbal
Citrus peel brightens the nose, then hibiscus brings a red-fruited floral note and green tea a leafy, slightly drying edge.
On the palate, wild honey adds a gentle natural sweetness and a rounder texture, without making the gin sugary. Hibiscus also has a tart, cranberry-like side that balances the honey. Juniper stays present from start to finish, so the fruit and flowers sit on a dry base rather than taking over. The finish is soft, with tea and honey lingering after the citrus has faded, and the green tea leaves a light, slightly tannic grip.
Cauldron suggests Sunset neat, with a mixer or in a cocktail. At 40%, it suits a long drink in which the tonic lifts the citrus and keeps the honey in proportion. Its colour also makes it an easy choice for a spritz-style drink or a light aperitif, where the floral side shows well. Tasted neat, it shows the order of the aromas most clearly: citrus first, then hibiscus and tea, with honey last.

The Mediterranean tonic is light enough to let the green tea come through, and its gentle herbal note sits well with the hibiscus and the honey.
