The cask brings oak and the lingering sweetness of Apera, the Australian fortified wine in the sherry style, to a recipe built on juniper, Red Centre lime, old man saltbush and native wattleseed. It is bottled at 42% ABV.

Gindu describes the result as native botanicals with a delicate, sweet oak. The tasting notes name Apera and raisin, both brought by the barrel, leading to a smooth, nuanced finish. Underneath, the botanicals of the Australian Dry are still there: Red Centre lime gives a piquant citrus, saltbush a savoury herbal note, and wattleseed an earthy, nutty and lightly spiced character. Oak and Apera broaden that base with warmer aromas and a softer close, which sets this gin clearly apart from the unaged version. The colour deepens towards amber, and the whisky history of the barrels adds a light, malty roundness.
The producer intends it for sipping and recommends it neat over ice, without a mixer. A large clear cube gives the spirit time to open as it slowly dilutes, the raisin and oak coming forward first and the lime returning at the end. Gindu also uses it in a Barrel Aged Old Fashioned, made with wattleseed syrup, bittersBittersHighly concentrated bitters (Angostura, orange…), added in dashes to season a cocktail.Glossary, a pinch of sea salt and orange peel, a recipe that ties the cask notes back to one of the gin's native botanicals. A splash of water opens it further.
