Distilled Gin · 40 % ABV · AU
Sandalwood, lemon myrtle, eucalypt and boronia, each distilled individually, shape Giniversity Botanical Gin, the brand's original flagship gin. It is bottled at 40% ABV in Margaret River, from a neutral grape spirit, and sold in 500 ml and 100 ml bottles.

Distilling each native botanical separately lets Giniversity balance them precisely, and the aim is an aromatic, elegant spirit with light floral notes and a smooth, delicate finish. JuniperJuniperThe one compulsory botanical: gin must taste predominantly of juniper. Its "berry" is really a small conifer cone, resinous and peppery.Glossary shines through as the predominant flavour. Lemon myrtleLemon myrtleThe leaf of an Australian tree with an intense lemon scent, purer than zest and without acidity.Glossary brings a fragrant, lemony lift; eucalypt a cool, resinousResinousAn aroma reminiscent of pine or fir resin. It is juniper's signature, due to compounds such as pinene.Glossary freshness; boronia, a Western Australian flower prized in perfumery, a delicate floral sweetness; and sandalwood a soft, woody warmth on the finish. The grape base gives the gin a smooth texture that carries these subtle aromas. Giniversity has since grown into Western Australia's best-selling craft gin, and this is where it started.
The distillery recommends pairing this contemporary Margaret River gin with slices of fresh strawberry, a sprig of rosemary and a premium dry tonic, a drink it describes as a summer afternoon in the South West. Strawberry brings out the floral side, and rosemary the eucalypt and juniper. It also suits a MartiniDry MartiniGin and a little dry vermouth, stirred over ice and served in a well-chilled stemmed glass, with an olive or a twist.Glossary with a lemon twistTwistA strip of peel twisted over the glass to release its oils, then dropped into the drink.Glossary, where the boronia and sandalwood show clearly. Neat over ice, the boronia and sandalwood are easiest to notice.
For a gin and tonic, pour 4 cl over ice and add 10 cl of East Imperial Yuzu Tonic. Place a fresh strawberry slice and a rosemary sprig in the glass. The yuzu tonic lifts the lemon myrtle, and the garnish follows the distillery's own pairing.
