Giniversity x Suckfizzle Gin

Barrel-Aged Gin · 40 % ABV · AU

Eight months in a freshly emptied Suckfizzle Chardonnay barrel give Giniversity x Suckfizzle Gin its sun-kissed golden colour. Giniversity made it with Stella Bella Wines, whose multi-award-winning Suckfizzle Chardonnay is a Margaret River classic, to showcase the region together. It is bottled at 40% ABV in a 500 ml bottle.

Its "berry" is really a small conifer cone, resinous and peppery.Glossary, lemon and sea water from Augusta, at the southern tip of the region, are its named elements, with the barrel lees, select coastal botanicals and meadowsweetMeadowsweetA wet-meadow flower smelling of honey and almond, with a faint medicinal note.Glossary. Giniversity describes a rich, balanced gin: a hint of oak and some natural sweetness, the scent of spring pasture blossom, counterbalanced by coastal salt and earth. Meadowsweet, a wildflower with a honeyed, almond-like scent, brings the blossom; the Chardonnay barrel and its lees add a creamy roundness; and the Augusta sea water a fine salinity. Lemon keeps the whole fresh. The name recalls the mischievous Lord Suckfizzle, a character from Rabelais' tales of giants and great lords. Meadowsweet was once used to flavour mead and ale.

The distillery recommends it neat on ice or with soda, perhaps with a sliver of fresh lemon, simple serves that leave the oak and the coastal notes in view. For a long drink, pour 4 cl over ice in a wine glass, add 8 cl of chilled soda water and stir once. The soda lengthens the gin without masking the Chardonnay, and the lemon echoes the botanical.

Soda keeps the wine-cask detail clear and avoids adding sweetness. Use lemon sparingly, both in the glass and on the plate beside it.
