Distilled Gin · 42 % ABV · AU
Ten botanicals, each taken from one of ten favourite Prohibition gins, make up this limited bottling marking the Adelaide distillery's first decade. The list reads juniper, coriander seed, hibiscus, fruit salad sage, mandarin, raspberry, orris, cassia, honey and finger lime. Part of the company's Bootleg Series, the 10 Year Anniversary Gin has a strength of 42% ABV.

JuniperJuniperThe one compulsory botanical: gin must taste predominantly of juniper. Its "berry" is really a small conifer cone, resinous and peppery.Glossary and coriander hold a dry centre, while mandarin and finger limeFinger limeAn Australian citrus whose pulp forms tiny tart pearls that burst in the mouth.Glossary bring a bright, juicy citrus. Raspberry and honey round the fruit, and hibiscus adds a tart, red-fruited floral note. Fruit salad sage, a sage with a sweet, tropical scent, broadens the herbal side, and cassia warms the finish. Orris ties the floral and fruit notes together with a soft, powdery depth. The result is layered but easy to read, a kind of summary of the house styles in one glass, with fruit and flowers set firmly on a juniper base. Mandarin gives a softer, sweeter citrus than lemon, while finger lime adds tangy little bursts.
The distillery's own cocktail for it is the Tenth Hour, which combines the gin with lemon juice, pineapple juice and a bar spoon of honey, garnished with citrus or pineapple. Lemon and pineapple sharpen the fruit, while the honey echoes one of the botanicals and rounds the cassia.
