For a long drink, pour 4 cl over ice in a wine glass, add 8 cl of chilled The London Essence Company Classic Tonic Water and top with 4 cl of sparkling water, then stir briefly. Add a small cluster of green grapes and a strip of lemon peel. The sparkling water lengthens the drink without making it too sweet, the grapes point to the Semillon, and the lemon brings a clean edge.
