Wheat grown, harvested and distilled on the Ubald estate in Quebec is the base of Gin fin floral, bottled at 41% ABV. The farm-to-bottle approach starts with crops from the distillery's own land and carries them through fermentation and distillation. Juniper is joined by wild blueberries, rose petals, sweet clover, jasmine and chamomile.
Floral · Fruity
Rose and chamomile lead the nose, with a light berry note behind them. On the palate, rose and jasmine set the floral direction, wild blueberries add a gentle fruit accent, and sweet clover and chamomile round the gin with a mild, hay-like herbal quality. Ubald describes the taste as gentle, fresh and slightly vanilla-like, an impression that sweet clover, with its natural coumarin scent, helps explain. Juniper and the wheat base remain present in a soft, dry finish. The wheat gives a softer texture than the brighter, more pointed gins of the range. Jasmine adds a heady, slightly sweet perfume that sits well with the rose.
The fruit and flowers stay measured rather than sweet, carrying the aroma from the first nose through to the finish. At 41%, the delicate botanicals still have enough definition to show in a cocktail. Ubald recommends a Gin Fizz or a gin and tonic with a generous aromatic garnish, and the Fizz, with lemon juice, sugar, egg white and soda, suits the floral notes well.
