Barrel-Aged Gin · 40 % ABV · NZ
Humdinger Rum Barrel-AgedBarrel-aged ginGin rested for a while in wooden casks. It picks up a golden colour and notes of vanilla, spice or the wine that filled the cask before.GlossarySee Barrel-aged gin gins Gin is the current release in Geraldine Distillery's limited barrel-aged series. Bottled at 40%, it begins with a spice-forward gin base, then rests for four months in oak that first held Buffalo Trace bourbon and later rum at another New Zealand distillery. That cask history gives the gin a different register from the distillery's unaged recipes: oak, warm spice and a measured sweetness join the familiar botanical foundation. The result is intended for slow sipping, but it remains versatile enough to take a little dilutionDilutionThe water added by melting ice. In the right amount it opens the aromas and softens the alcohol; too much flattens the drink.Glossary.
Woody · Limited Edition · Spicy
The first impression is rounded and warming. The oak contributes toasted wood and vanilla-like warmth, while the former rum cask brings a gentle molasses-like sweetness. A toffee note lingers on the palate, integrated rather than sticky, and the underlying gin botanicals remain perceptible beneath it. The spice-forward base keeps the sweetness in check and gives the finish a dry edge. A single ice cube gradually opens the aromas and softens the alcohol, allowing the oak and toffee to appear in stages rather than all at once.
The four-month rest is a defining part of this particular release. The barrels have already held two spirits before the gin enters them, so the wood carries a layered history instead of a single fresh-oak character. Geraldine Distillery describes its barrel-aged range as limited batches shaped by time, oak and the character of each cask. Earlier releases aged in bourbon or Pinot Noir casks followed different profiles. This release is specifically marked by the bourbon-to-rum cask sequence.
The producer recommends it over ice or topped with ginger ale. For a long drink, place one large clear cube in a low glass, add 5 cl of gin and 10 cl of dry ginger ale, then finish with a broad orange peel and set a few juniper berriesJuniperThe one compulsory botanical: gin must taste predominantly of juniper. Its "berry" is really a small conifer cone, resinous and peppery.Glossary beside the glass. The ginger gives the warm spice a lively lift, while the peel adds a fresh aroma that balances the cask's toffee note. It can also be enjoyed on a single cube, with no mixer, to follow the change from juniper and spice to oak and lingering sweetness.
