The nose is led by ripe strawberry and the bright, tart scent of rhubarb. Elderflower softens the fruit with a light floral note, while pink peppercorn contributes a delicate, aromatic spice rather than strong heat.
On the palate, strawberry gives a rounded first impression and rhubarb brings a fresher, more tangy edge. Juniper remains beneath the fruit, and the peppercorn helps the finish stay lively instead of becoming confectionery. The 42.5% bottling gives the botanicals room to show through a measured dilutionDilutionThe water added by melting ice. In the right amount it opens the aromas and softens the alcohol; too much flattens the drink.Glossary.
The fruit ferments before distillation, while the plants are macerated. Ripe strawberry brings natural roundness, balanced by rhubarb's acidity and the dry botanical line of juniper; no sugar is added to the fruit juices. The combination of strawberry, rhubarb, elderflower and pink peppercorn therefore reads as a fruit-led gin with both acidity and floral detail, not as a sweet liqueur.
