Originally, plain gin with a few dashes of Angostura bitters.Glossary is made with twelve botanicals and bottled at 38% ABV at the Old Smiddy, beneath Stirling Castle. The distillery names rose petals, pink peppercorn and pink grapefruit among the ingredients, and places the bottle in its Folklore Collection, a range inspired by the stories and legends of Stirling. Each bottle is finished with a hand-dipped pink wax seal. June and Cameron McCann started Stirling Gin in their kitchen in 2015 and opened the distillery in the restored Old Smiddy, a building of 1888, in 2019; in 2023 it also distilled the first whisky made in Stirling for more than 170 years.
Spicy · Floral · Fruity
Rose and grapefruit shape the first impression, while pink peppercorn brings a gentle warmth through the palate. The producer describes a fresh, fruity style with a long, clean finish and a warm peppercorn fade. The floral note comes from rose petals; grapefruit supplies the bright citrus edge, and pink peppercorn gives the finish its measured spice. It remains a gin rather than a sweetened liqueur, so fruit remains balanced by a recognisable botanical structure.
For its recommended serve, Stirling pairs the gin with Fever-Tree Raspberry & Rhubarb Tonic, fresh raspberries and a twist of grapefruitTwistA strip of peel twisted over the glass to release its oils, then dropped into the drink.Glossary peel, served over plenty of ice. The berries extend the fruit, while grapefruit echoes the citrus in the recipe and pink peppercorn gives the long drink a gentle warmth. Stirling also suggests using the gin in a fruity spritz with prosecco. The 38% bottling is available in 70 cl and 5 cl sizes, and the wax seal marks its place in the distillery's Folklore range. The detailed serve uses 5 cl of gin and 15 cl of raspberry-rhubarb tonic over ice in a copaCopa glassA large stemmed balloon glass, popularised by the Spanish gin and tonic: it stays cold for longer and gathers the aromas above the drink.Glossary. Two fresh raspberries and a twist of pink grapefruit peel go into the drink. The tonic extends the fruit; the grapefruit links back to the recipe, and the peppercorn remains the drier counterpoint.
