The seasonal release is built around a clear contrast: ripe citrus fruit at the front, an aromatic savoury note in the middle and a restrained pepper finish. Blood orange gives the gin its rounded citrus direction, with a little more depth than a sharp lemon profile. Bay leaf brings an earthy, green aroma that keeps the fruit grounded, while white peppercorn adds a mild dry spice. Juniper supplies the classic resinous backbone and prevents the citrus from reading like flavoured vodka. Serve it as a clean gin and tonic: 4.5 cl gin, 12 cl Fever-Tree Indian Tonic Water, plenty of clear ice, a thin slice of blood orange and a small bay leaf. Add the tonic slowly and stir once, keeping the bubbles intact. Indian tonic gives enough quinine bitterness to balance the orange without adding another dominant fruit flavour. Use one bay leaf only; too much can overwhelm the glass. The result stays refreshing but has more savoury depth than a simple citrus highball.
