Farmer's Wife Distillery rests Warm Winter Gin in a former peated-whisky barrel from Black Gate Distillery and bottles it at 48% ABV. That cask finish gives the gin a direct link to whisky-making and adds a measured smoky and woody dimension to its botanical base.

The distillery names juniper, pink grapefruit, native sage and pepperberry among the botanicals. Juniper brings the dry, resinous core; grapefruit lifts it with citrus, and sage and pepperberry add an herbal, lightly spiced direction. Time in the peated-whisky cask contributes smoke and oak to the aroma and finish. The barrel does not erase the gin's botanical character; it changes the way those notes meet the palate.

Warm Winter is most rewarding when its dilution is allowed to develop gradually.
