HM Anise Gin returns in 2026 as a Distiller's Special, made in a batch of just 45 bottles at HM Gin's distillery in Plenty, Victoria. The 43% gin was developed after head distiller Gavin completed WSET Level 3 and began exploring spirits such as ouzo and absinthe. That curiosity led him back to the still with a specific aim: to give the anise botanicals a more prominent place while keeping the distillery's familiar smooth finish.

Juniper anchors a recipe built around star anise and anise myrtle, supported by liquorice root, aniseed and fennel. The distillery describes the 2026 version as bolder and more intense than its earlier anise gin. Aromatically, the anise is immediate and warm, with fennel and liquorice adding depth; juniper brings a drier, resinous counterpoint. The combination recalls the aromatic family of Mediterranean anise spirits, but the gin retains its own juniper-led profile.
The palate is full and spice-forward. Star anise and aniseed dominate the opening, then liquorice and fennel broaden the middle with a rounded, gently sweet impression. Juniper keeps the finish dry enough to avoid a liqueur-like weight, while the 43% strength carries the spices into a lingering close. A slice of lemon brings a clean citrus contrast and makes the aromatic character easier to follow.
The distillery recommends a splash of classic or elderflower tonic with lemon, and also suggests lemonade for a sweeter drink. For a balanced G&T, fill a balloon glass with clear ice, pour 4.5 cl and add 10 cl Fever-Tree Elderflower Tonic Water, then finish with a thin lemon wheel and one star-anise pod. Use a modest tonic measure so the anise stays clear. The gin also works over ice with a little water, which softens the spice and lets the juniper emerge.
