York Gin Distillers Cut No One ForaGIN brings four hand-foraged York botanicals into the distillery's London Dry gin. Lime-tree flowers, pineapple weed, hogweed seed and cow parsley seed were gathered in the city's meadows and along the Ouse. The 47.5% gin is the first release in York Gin's Distiller's Cut series, made in a run of 200 bottles.

Each plant was distilled separately in small copper stills before the resulting spirits were blended, measure by measure, into the London Dry base. That method lets the distillers judge what each wild ingredient contributes. Honeyed lime-tree flower leads the aroma, followed by the soft fruit and chamomile-like character of pineapple weed. Hogweed seed brings a clear citrus-spice impression, while cow parsley seed adds a green, aniseed note.
On the palate, the familiar dry gin foundation keeps the floral and fruit notes in focus. The hogweed's orange, cardamom and ginger character gives the middle a brighter, warmer edge; cow parsley carries a lighter herbal-anise flavour into the finish. The result moves from gentle floral sweetness to citrus and spice, without losing the juniper-led shape of the base gin. At 47.5%, it has enough concentration for a Martini as well as a longer drink.
For a G&T, fill a chilled balloon glass with clear ice, pour 4.5 cl and add 12 cl of Fever-Tree Indian Tonic Water. A narrow strip of orange peel echoes the citrus and spice in the hogweed seed, and a slim lemon twist alongside it gives a cleaner finish. Add the tonic slowly and stir once, so the delicate floral notes remain clear. ForaGIN also suits a small neat pour or a simple Martini, where its four foraged botanicals can be tasted without extra sweetness. The restrained tonic and citrus garnish keep those local plants at the centre of the tasting, while the dry base gives the floral and spice notes a familiar point of reference.

Orange Peel
Lemon PeelFill a chilled balloon glass with clear ice.
Add 4.5 cl ForaGIN and 12 cl Fever-Tree Indian Tonic Water.
