Eleven months in Amontillado sherry and in-house charred Oloroso casks give Bivrost Cask Aged Gin 2025 its place between classic gin and the darker tones of a barrel-aged spirit. Aurora Spirit builds it on the distillery's Arctic Gin, then lets the selected casks shape the result. The 44% bottling keeps juniper in view while bringing oak and dried-fruit character forward.

The distillery describes a fruity nose with juniper, citrus and oak. The palate stays fresh and fruit-led, with juniper, wood and spice; the finish is warm and silky. Aurora Spirit, which makes it, is based in Lyngen, in Arctic Norway, and presents itself as the world's northernmost distillery. The name Bivrost refers to Bifröst, the burning rainbow bridge of Norse mythology that links the world of humans to Asgard.

The 2025 release was made as Batch 4, with approximately one thousand bottles. Its cask selection combines two sherry styles: Amontillado brings a drier, nut-led direction, while the charred Oloroso wood contributes a deeper toasted edge. The gin is bottled at 44% ABV in a 50 cl format. The aging is not meant to turn it into whisky; it adds a measured layer of oak to a juniper-based spirit.

Bivrost recommends sipping it neat or over one ice cube, and suggests using it in spirit-forward drinks such as a Martinez or an Old Fashioned. The distillery advises against a Gin & Tonic, where a large measure of tonic would dilute the softened cask aromas. For a simple Old Fashioned, stir 5 cl gin with a small measure of sugar syrup and bitters over ice, then finish with orange peel. The cask-led profile stays legible, while the citrus lifts the warmer notes; a Martinez, with sweet vermouth and maraschino, brings out the dried-fruit side of the sherry casks.
