Macerated in the house's award-winning Istrian Dry Gin and then distilled a second time, Flying Goat Navy Strength reaches 58% ABV. Istarska Kapljica, a distillery in Istria, Croatia, calls the process demanding and production limited; it comes in a 70 cl bottle. The label lists agricultural alcohol, juniper and spices, and the distillery adds that Mediterranean herbs, rosemary, sage and mint, complete the flavour. Navy strength recalls the old Royal Navy rule that gin stored aboard ships had to stay flammable even if it soaked the gunpowder.

The base gin uses juniper hand-picked on the uplands of Ćićarija, with coriander, cardamom and cinnamon and a citrus finish. For the Navy Strength, selected botanicals are steeped in that gin before the second run through the still, which concentrates the aromas and gives the spirit more weight. At the London Spirits Competition in 2024 it won a silver medal.
Juniper remains the backbone, now with a firmer, oilier texture. Rosemary and sage take the gin in a dry, savoury direction, while mint adds a cool lift that cuts through the strength. The finish is long and warming, with the herbs lingering after the alcohol fades. At 58% ABV, taste it slowly and in small amounts; a few drops of water open the herbs and soften the alcohol without flattening the gin.
The distillery recommends it for bold cocktails and shares its own Navy 58: 5 cl of gin shaken with 3 cl of lime juice and a little simple syrup, then topped with tonic. Lime brings freshness to the high strength, and a sprig of rosemary echoes the herbs. The same strength holds up well in a Gimlet or a Negroni, where a softer gin would simply disappear behind the other ingredients.

Rosemary SprigShake 5 cl of Flying Goat Navy Strength Gin with 3 cl of fresh lime juice and a little simple syrup over ice, strain into a glass filled with ice and top with 10 cl of Fever-Tree Indian Tonic Water.
Garnish with a lime wheel and a small sprig of rosemary.
