In Adelaide, Prohibition Liquor Co. pairs fresh local yuzu with mandarin peel over a clean, dry juniper backbone in this Bootleg Series gin. Prohibition makes it at its Gilbert Street distillery in the city centre and at Seppeltsfield in the Barossa. At 42% ABV, the 500 ml release keeps its aromatic detail clear in a tall drink, while its drier, pine-like structure prevents the fruit from taking over.

Sansho pepper brings a green, lightly tingling spice with a hint of grapefruit pith. Galangal adds gentle warmth rather than a heavy heat, and jasmine gives the middle of the sip a soft floral note. Native white kunzea contributes a distinctly Australian botanical accent; coriander seed rounds the blend without obscuring the citrus. Each element has a role, so the result stays bright and layered instead of turning into a simple citrus-flavoured spirit.

The yuzu's fragrant peel gives the aroma a sharper edge than the mandarin alone.

On the palate, the fruit arrives first, followed by juniper and the pepper's dry-green character. Galangal lingers gently at the finish, with the floral notes sitting behind it. The progression is especially easy to notice when the drink is not over-diluted or crowded with extra sweet ingredients.

For a long serve, pour 4 cl over large clear ice and add 10 cl of chilled Indian tonic. A narrow yuzu wheel and a strip of mandarin peel bring the same citrus cues to the glass without masking the gin. The producer also points to a yuzu highball and a stirred martini; both keep the emphasis on the balance between aromatic peel, spice and juniper. Use a restrained mixer and the botanical detail remains distinct from the first sip to the last. The dry structure keeps the peel, spice and juniper in focus as the drink opens over ice.
