Blood lime opens The Admiral's Cut, a gin from Flagship Distillery in Adelaide that combines classic juniper with Australian native botanicals and honey. The recipe uses blood lime, roasted wattleseed, orange blossom honey and cinnamon myrtle alongside juniper, and the 42% ABV gin comes in 70 cl, under a bright yellow and orange label. Native citrus such as blood lime has become a signature of Australian craft gin, and together the four native ingredients give this one a distinctly South Australian accent.

Blood lime is an Australian hybrid citrus, a cross between the native finger lime and the Rangpur lime, with deep red skin and flesh and a sharp, tangy flavour. Wattleseed, the seed of native acacias, is traditionally roasted and ground, and brings a nutty, coffee-like warmth. Cinnamon myrtle, a rainforest tree, gives a gentle cinnamon spice, and orange blossom honey adds a soft floral sweetness.
According to the distillery, the gin opens with vibrant citrus from the blood lime, complemented by the earthy warmth of the roasted wattleseed. The cinnamon myrtle contributes gentle spice at mid-palate, while the orange blossom honey leaves a smooth, lingering finish. Juniper holds the profile together, so the native botanicals read as a frame around a classic gin rather than a replacement for it, and the finish stays long, soft and lightly honeyed.
Flagship's recommended serve is 45 ml of The Admiral's Cut with a premium tonic, garnished with ruby grapefruit and rosemary. The grapefruit echoes the citrus of the blood lime, and the rosemary adds a herbal lift against the honeyed finish. Fill a highball with plenty of ice so the drink stays crisp, and keep the rosemary sprig small so it does not dominate.
