Behind every bottle of Evrythng gin sits a promise to fund climate solutions. The company calls itself the UK's first not-for-profit spirits business: all of its profits go to organisations fighting the climate crisis, and at least £7.50 from each sale of this gin goes straight to that cause. Its bright green label, shaped like a raised hand, carries the name The Not For Profit Spirits Co., and the bottle holds 70 cl at 40% vol.
Dry · Herbal
The founders, who spent twelve years in the independent spirits trade before launching the project, chose to work with an independent distillery in Wales that shares their values. Together they made a classic London Dry, which the brand sums up as lots of juniper and a swag bag of other botanicals. The complete recipe is not disclosed, and the range also includes a vodka and a rum sold on the same not-for-profit model.
Juniper is the backbone of the gin and the first thing on the nose, piney, fresh and immediately recognisable.
The palate stays dry and clean, in the tradition of the London Dry style, with the supporting botanicals adding a little spice and citrus without pulling the gin towards sweetness. It is a straightforward bottle, designed to be versatile rather than eccentric. Served very cold in a small glass, it lets you judge the juniper before deciding how much tonic to add.
That makes it easy to use. A highball with large ice, a measure of gin, plenty of chilled Indian tonic and a twist of lemon is the obvious starting point. It also suits the classics that rely on a juniper-led gin, from a Martini to a Negroni or a Tom Collins, and every one of them contributes a little to the climate projects the company supports, which is the whole point of the brand.
