See the perfect serveThe 587 in the name is the height in metres of Mount Hum, the highest point on the Croatian island of Vis, where most of this gin's thirteen botanicals are picked by hand. Gary Ward, a former British Navy diver, and his Norwegian wife Hilde Hellebø Ward settled on the island and founded their distillery, Okusi Visa, in 2020. Their Botanical Gin is a London Dry bottled at 42% ABV.
The documented botanicals include juniper, angelica root, orris root, coriander, Greek sage, rosemary, lemon peel, wild mandarin and bergamot leaves. They macerate for at least 24 hours in premium grain spirit before a slow run of twelve hours or more in a 300-litre copper still, and only the heart of each distillation is kept. The water comes from an ancient fountain in Komiža, rising through volcanic rock, which the couple point out was already used by the Greeks some 2,400 years ago.
The distillery compares the aroma to Vis in the cool early hours of the morning. The first sip is fully herbal, with sage and rosemary leading and juniper holding everything together, and the finish lingers on the scent of the island's lemons. That balance has earned the gin a place among the country winners of the World Gin Awards in 2024, a gold medal in 2023 from the London Spirits Competition and another gold at the European satellite of the San Francisco World Spirits Competition in 2025.
Its herbal character works best with a plain Indian tonic, plenty of ice, a twist of lemon and, if you like, a small sprig of rosemary. Pour the tonic gradually and taste as you go, so the Mediterranean herbs stay in front. Served neat and cool, it shows the move from herbs to lemon even more clearly, and the distillery publishes its own Gin & Tonic recipe for this bottle.

RosemaryFill a balloon glass with large ice cubes, pour 4 cl of HUM 587 Botanical Gin and add 10 cl of chilled Fever-Tree Indian Tonic Water.
Garnish with a lemon twist and a small sprig of rosemary.
