Best enjoyed with Fever-Tree Indian Tonic Water, garnished with Rhubarb ribbon and Thyme sprig.
See the perfect serveVOR Barrel Aged begins with the Icelandic barley spirit and wild juniper used by Eimverk for its pot-distilled gin. The distillery then gives this 47% bottling time in oak, which explains its pale amber colour and makes it a separate drink from the clear VOR gin. Rhubarb, angelica, birch leaves, creeping thyme and Iceland moss are among the plants associated with the base recipe. Their herbal detail matters here because the wood changes the way those flavours are perceived, rather than replacing them with a simple vanilla note.
The first impression is still juniper, followed by a drier, root-like side and the sharper scent of herbs. Oak brings a softer middle and a little warmth to the finish. The barley base lends weight to the texture, so a small neat pour is worth trying before adding any mixer. A drop of water opens the herbs and lets the rhubarb's tart character emerge without turning the gin sweet. It is a barrel-aged gin that retains its botanical identity, not an attempt to imitate whisky.
For a longer drink, use only a measured amount of Indian tonic. Large ice keeps the dilution slow; a narrow rhubarb ribbon and a modest thyme sprig echo the original plants. Put another ribbon and sprig beside the glass so their aromas can be appreciated before tasting. Too much tonic would flatten the contrast between wild juniper and oak. Those who prefer a shorter drink can replace the tonic with a single large cube and take a few minutes to follow the changing aroma. The juniper continues to give the drink its shape even when the last sip is more wood than herb.
