Juniper, citrus peel, sweet woodruff, herbs and a touch of horseradish all have a place in its profile. That last note gives the gin a gently savoury edge; it is not a reason to expect the heat of a spoonful of freshly grated root. The botanical profile remains fresh, dry and recognisably juniper-led.
The citrus appears early, then the herbs take over without pushing juniper aside. Woodruff has a soft, green scent that helps explain the gentler middle of the palate. Horseradish is most useful as a point of contrast, lending a small sharpness to a finish that otherwise might feel simply herbal. Try a little neat before diluting: the relationship between peel, herbs and dry spice is easier to understand. On ice the sharper edges ease, but the gin does not lose its clean finish.
