Estate honey completes the trio, laid over the London Dry framework of the brand's flagship gin, so juniper still runs underneath the fruit.
White peach gives the soft, ripe centre of the aroma. Rose oil lifts it with a floral note that stays fragrant rather than soapy, and honey adds roundness without turning the finish into dessert. The result is aromatic and fruit-forward while keeping the dry structure of a London Dry, which is what separates it from the sweetened pink gins it might be shelved beside.
Highclere Castle Spirits launched the bottling in the United States in March 2026 as the second expression in the range, after the original London Dry built on botanicals from the estate. The inspiration given is the castle's summer gardens, and the brand positions it for drinking over ice as readily as in cocktails. Priced as a super-premium bottling, it is aimed at drinkers who already know the original and want something lighter for warm weather. It reached shops, bars and the brand's own online store at the same time, right across the United States.
Our tonic serve keeps the fruit and the flower in view. Fill a tall glass with large cubes, pour a 4cl measure, then Indian tonic, 10cl and very cold, down the side. Lay a thin slice of white peach against the ice and scatter a few rose petals on top. Avoid syrups entirely: the honey in the recipe already supplies all the sweetness this drink can carry, and a sugary mixer would flatten the rose. Served over rocks alone, without any mixer, the peach comes through more clearly still.
